I've been making hard cider and perry (often called "pear cider") since 1997, using apples and pears from the old trees on our property above the mountain town of Colfax, California. In 2014, we opened Colfax Cider House in the old freight house on Main Street, a cider tasting room where we sold ciders from all over the world. At the time it was the only shop of it's kind in the US. (My great-great grandfather used to ship apples from this building). It was a wonderful place. Two years later, I would decide to produce my own cider for sale but due to federal "Tied-House Rules" (a hold-over from prohibition), I would not be able to sell it in my own shop. So we closed the shop and started production as Colfax CiderWorks using the same space for a time, later moving the business to our property in Alta. As the business grows, we hope to move back to Colfax.
Currently, we offer a Saison Hard Cider and a pear cider (called perry) which is slightly sweet.
